Sausage & Veggie Bake

While most of the eating at our house is vegetarian, once a month, we indulge in a "meat weekend." This weekend, we made one of my favorite meals from our carnivorous days (shout out to my mama who "invented" this meal). 

I've detailed our normal recipe below. When we made it yesterday, we used fresh carrots from a friend's garden and threw in some leftover asparagus. I don't know that I'd use the asparagus again, but it was a nice experiment. 

1 package Smoked Turkey Sausage
8 oz Button Mushrooms
1/2 Onion (or a whole one if you really like onions)
1-2 TB Garlic
1 Green Pepper
10 Baby Carrots
3-4 Potatoes (white or red)
1-2 TB Olive Oil
Salt & Pepper (to taste)

1. Preheat oven to 375 degrees

2. Lightly coat a 9 X 12 baking pan with cooking spray. 

3. Cut  vegetables & sausage and place in the pan. Drizzle with oil and sprinkle with salt and pepper.   

4. Bake at 375 degrees for about 40 minutes or until potatoes are tender. I'd recommend checking every 20 minutes. 

Enjoy with a hearty red wine, if you're so inclined...Cheers!
